🍽️ Crispy Tuna with Fresh Orange Dip

Ingredients
- 300 g Tuna (sliced into thin slices)
- 2 unpeeled Oranges
- 2 tbsp Orange liqueur
- 2 tbsp Lemon juice
- 1 tbsp Honey
- 8 Thyme sprigs
- 2 tbsp Oil
- Sea salt
- Pepper (from the mill)
Instructions
- 1. Finely grate the zest from one orange.
- 2. Place the orange zest in hot water for a few seconds.
- 3. Cut out the segments from both oranges.
- 4. Catch the juice from the oranges in a bowl.
- 5. Squeeze the remaining pulp by hand and add it to the juice.
- 6. Heat oil in a pan.
- 7. Sear the tuna on both sides for a short time.
- 8. Remove the tuna from the pan.
- 9. Place the tuna on warmed plates.
- 10. Add honey to the hot pan.
- 11. Deglaze the honey with liqueur.
- 12. Add thyme sprigs to the pan.
- 13. Deglaze the pan with the reserved orange juice.
- 14. Add lemon juice.
- 15. Let the sauce reduce for a short time.
- 16. Season the sauce with salt and pepper.
- 17. Add the orange segments to the sauce.
- 18. Add the orange zest to the sauce.
- 19. Let the oranges warm through in the sauce.
- 20. Pour the sauce over the tuna.
- 21. Sprinkle a bit of sea salt over it.
- 22. Serve the dish immediately.
