  3. 3. Cut out the segments from both oranges.
  4. 4. Catch the juice from the oranges in a bowl.
  5. 5. Squeeze the remaining pulp by hand and add it to the juice.
  6. 6. Heat oil in a pan.
  7. 7. Sear the tuna on both sides for a short time.
  8. 8. Remove the tuna from the pan.
  9. 9. Place the tuna on warmed plates.
  10. 10. Add honey to the hot pan.
  11. 11. Deglaze the honey with liqueur.
  12. 12. Add thyme sprigs to the pan.
  13. 13. Deglaze the pan with the reserved orange juice.
  14. 14. Add lemon juice.
  15. 15. Let the sauce reduce for a short time.
  16. 16. Season the sauce with salt and pepper.
  17. 17. Add the orange segments to the sauce.
  18. 18. Add the orange zest to the sauce.
  19. 19. Let the oranges warm through in the sauce.
