  2. 2. Slice the onion lengthwise into thin half rings.
  3. 3. Heat one tablespoon of butter in a frying pan.
  4. 4. Sauté the onion rings until they are translucent.
  5. 5. Lift the glass noodles out of the water and let them drain.
  6. 6. Cut the noodles into smaller pieces with scissors if necessary.
  7. 7. Cook the noodles according to the package instructions in salted water.
  8. 8. Drain the noodles and rinse them with cold water.
  9. 9. Let the noodles drain completely.
  10. 10. Heat the remaining butter in a clean frying pan.
  11. 11. Pour the soy sauce and oyster sauce into the pan.
  12. 12. Let the sauces reduce for a short time.
  13. 13. Add the ginger and rice vinegar.
  14. 14. Season the sauce with a little sugar.
  15. 15. Cut the tuna into six even slices.
  16. 16. Divide the glass noodles and onions onto two plates.

  18. 18. Wash the arugula and arrange it on top.
