  1. 1. Put sugar and 75 milliliters of water into a pot. Heat the mixture while stirring until it boils. Remove the pot from the heat and let the sweet liquid cool down.
  2. 2. Cut the chili pepper in half lengthwise. Remove the seeds and wash the peppers thoroughly. Then cut them crosswise into very thin strips. Peel one carrot and cut it into very thin strips as well.
  3. 3. Mix the chili strips, carrot strips, and vinegar with the cooled sugar water. Let this mixture marinate for at least one hour at room temperature to allow the flavors to develop.
  4. 4. Peel the garlic clove and the piece of ginger. Chop both ingredients very finely. Mix the chopped vegetables with the minced meat. Season the meat with salt and pepper.
  5. 5. Heat oil in a non-stick pan. Fry the seasoned minced meat until crispy over high heat for about 10 minutes, stirring constantly. Remove the meat from the pan and let it drain on kitchen paper and cool down.
  6. 6. Put the rice noodles into a bowl. Pour very hot water over them and let them soak for 15 minutes. Drain the water and let the noodles drain well. Then cut the noodles into smaller pieces using scissors.
  7. 7. Peel the cucumber, wash it, and cut it into very thin strips. Peel the second carrot and the radish. Cut these vegetables into very thin strips as well.
  8. 8. Wash the Thai basil and shake it dry. Pluck the leaves from the stems and chop them roughly. Wash the lettuce, spin it dry, and set it aside.
  9. 9. Dip two rice paper sheets each into water at approximately 50 degrees Celsius for 45 seconds. Remove the sheets and lay them overlapping strongly on a damp kitchen towel.
  10. 10. Place three lettuce leaves on the rice paper. Distribute one quarter of the prepared filling ingredients on top. Make sure to leave a border of at least 2 centimeters on all sides.
  11. 11. Roll the spring rolls tightly using the kitchen towel. Repeat the process with the remaining sheets. Cut the finished rolls into wide pieces before serving. Decorate them with chives if desired. Serve the rolls together with the prepared sauce.
