🍽️ Thai Fish Balls with Cucumber Relish

Ingredients
- 4 tbsp rice vinegar
- 60 g sugar
- 2 cloves garlic
- 4 pieces shallots
- 1 piece cucumber
- salt
- pepper from the mill
- 50 g frozen green beans
- 300 g cod fillet
- 1 walnut-sized piece ginger
- 2 tbsp red curry paste
- 1 piece egg
- 2 tbsp cornstarch
- 2 tbsp fish sauce
- cilantro
- 2 tbsp oil
Instructions
- 1. Combine rice vinegar with 4 tablespoons of water and sugar in a pot.
- 2. Bring the vinegar-sugar mixture to a boil.
- 3. Let the mixture cool down completely.
- 4. Peel the garlic and shallots.
- 5. Finely chop the garlic and shallots.
- 6. Peel the cucumber.
- 7. Cut the cucumber in half lengthwise.
- 8. Remove the seeds from the cucumber.
- 9. Cut or shred the cucumber into fine strips.
- 10. Mix the cucumber strips with the cooled vinegar-sugar mixture.
- 11. Add the chopped garlic and shallots to the cucumber mixture.
- 12. Season the relish with salt and pepper.
- 13. Let the relish marinate so the flavors can blend.
- 14. Thaw the green beans according to the package instructions.
- 15. Cut the fish fillet into coarse cubes.
- 16. Peel the ginger.
- 17. Roughly chop the ginger.
- 18. Place the fish fillet, ginger, and curry paste into the electric chopper.
- 19. Puree the ingredients in the chopper until smooth.
- 20. Work the egg into the fish mixture.
- 21. Add the cornstarch to the mixture.
- 22. Add the fish sauce to the mixture.
- 23. Roughly chop the green beans.
- 24. Rinse the coriander.
- 25. Shake the coriander dry.
- 26. Finely chop the coriander leaves.
- 27. Fold the chopped green beans into the fish batter.
- 28. Fold the chopped coriander leaves into the fish batter.
- 29. Season the fish mixture with salt and pepper.
- 30. Form 12 balls from the fish mixture.
- 31. Slightly flatten the balls.
- 32. Heat oil in a non-stick pan.
- 33. Fry the fish balls on all sides for about 5 minutes.
- 34. Serve the fish balls together with the cucumber relish.
