  1. 1. Mix rice flour, half a teaspoon of salt, and baking powder in a bowl.
  2. 2. Separate an egg and use the egg white for something else.
  3. 3. Whisk the egg yolk with sparkling water in a separate bowl.
  4. 4. Slowly stir the egg yolk mixture into the flour mixture using a whisk.
  5. 5. Wash the asparagus and trim off the woody ends.
  6. 6. Peel the bottom third of the asparagus stalks.
  7. 7. Heat oil in a pan.
  8. 8. Dip the asparagus stalks into the batter.
  9. 9. Fry the asparagus in the hot fat over medium heat for 5 to 7 minutes until golden yellow.
  10. 10. Remove the asparagus and let it drain on kitchen paper.
  11. 11. Meanwhile, grind half a teaspoon of salt in a mortar with matcha powder to make a fine salt.
  12. 12. Whisk together tamari sauce, orange juice, lemon juice, and one tablespoon of water.
  13. 13. Wash the chives and cut them into small rings.
  14. 14. Stir the chive rings into the sauce.
  15. 15. Place the asparagus on plates.
  16. 16. Sprinkle the asparagus with the matcha salt.
  17. 17. Serve the asparagus with the sauce.
