🍽️ Crispy Tempura Asparagus with Matcha Salt

Ingredients
- 150 g rice whole wheat flour
- salt
- 0.25 tsp baking powder
- 1 egg
- 175 ml carbonated mineral water
- 500 g green asparagus
- 6 tbsp rapeseed oil
- 1 tsp matcha tea powder
- 2 tbsp tamari sauce
- 2 tbsp orange juice
- 0.5 tbsp lemon juice
- 10 g chives (0.5 bunch)
Instructions
- 1. Mix rice flour, half a teaspoon of salt, and baking powder in a bowl.
- 2. Separate an egg and use the egg white for something else.
- 3. Whisk the egg yolk with sparkling water in a separate bowl.
- 4. Slowly stir the egg yolk mixture into the flour mixture using a whisk.
- 5. Wash the asparagus and trim off the woody ends.
- 6. Peel the bottom third of the asparagus stalks.
- 7. Heat oil in a pan.
- 8. Dip the asparagus stalks into the batter.
- 9. Fry the asparagus in the hot fat over medium heat for 5 to 7 minutes until golden yellow.
- 10. Remove the asparagus and let it drain on kitchen paper.
- 11. Meanwhile, grind half a teaspoon of salt in a mortar with matcha powder to make a fine salt.
- 12. Whisk together tamari sauce, orange juice, lemon juice, and one tablespoon of water.
- 13. Wash the chives and cut them into small rings.
- 14. Stir the chive rings into the sauce.
- 15. Place the asparagus on plates.
- 16. Sprinkle the asparagus with the matcha salt.
- 17. Serve the asparagus with the sauce.
