  1. 1. Put flour, egg, salt, and about 350 milliliters of water into a bowl.
  2. 2. Knead the ingredients into a firm dough.
  3. 3. Cover the dough and let it rest for 30 minutes.
  4. 4. Put the minced meat into a separate bowl.
  5. 5. Peel the onion and the garlic.
  6. 6. Finely chop the onion and garlic.
  7. 7. Wash the dill and shake it dry.
  8. 8. Finely chop the dill fronds.
  9. 9. Add the chopped onion, garlic, and 2 tablespoons of dill to the minced meat.
  10. 10. Season the filling with salt and pepper.
  11. 11. Roll out the dough.
  12. 12. Cut out circles with a diameter of about 10 centimeters.
  13. 13. Place about 1 tablespoon of filling in the center of each dough circle.
  14. 14. Pull the dough up into folds over the filling.
  15. 15. Seal the dumplings well.
  16. 16. Put the chinkali into boiling salted water.
  17. 17. Let them simmer for about 15 minutes until they are cooked through.
  18. 18. Remove the chinkali from the water with a slotted spoon.
  19. 19. Sprinkle them with the remaining dill and some pepper.
  20. 20. Serve the dumplings immediately.
