🍽️ Georgian-style Meat Dumplings (Chinkali)

Ingredients
- 800 g Wheat flour Type 1050
- 1 Egg
- Salt
- 600 g Beef mince
- 1 Onion
- 1 Garlic clove
- 1 bunch Dill
- Pepper (from the mill)
Instructions
- 1. Put flour, egg, salt, and about 350 milliliters of water into a bowl.
- 2. Knead the ingredients into a firm dough.
- 3. Cover the dough and let it rest for 30 minutes.
- 4. Put the minced meat into a separate bowl.
- 5. Peel the onion and the garlic.
- 6. Finely chop the onion and garlic.
- 7. Wash the dill and shake it dry.
- 8. Finely chop the dill fronds.
- 9. Add the chopped onion, garlic, and 2 tablespoons of dill to the minced meat.
- 10. Season the filling with salt and pepper.
- 11. Roll out the dough.
- 12. Cut out circles with a diameter of about 10 centimeters.
- 13. Place about 1 tablespoon of filling in the center of each dough circle.
- 14. Pull the dough up into folds over the filling.
- 15. Seal the dumplings well.
- 16. Put the chinkali into boiling salted water.
- 17. Let them simmer for about 15 minutes until they are cooked through.
- 18. Remove the chinkali from the water with a slotted spoon.
- 19. Sprinkle them with the remaining dill and some pepper.
- 20. Serve the dumplings immediately.
