  1. 1. Sift the flour into a bowl and form a well in the center. Dissolve the yeast in the milk, pour it into the well, sprinkle some flour from the edges over it, and let it rest covered for about 15 minutes. Work in the eggs, sugar, and oil, then let the dough rise again covered for 30 minutes.
  2. 2. Peel the onion and garlic. Heat the butter and oil, sweat both, add the minced meat, and brown it until crumbly. Clean the mushrooms, chop them finely, and mix them into the minced meat. Season with salt and pepper.
  3. 3. Roll out the dough thinly on a floured work surface and cut out circles with a cookie cutter with a 10 cm diameter. Knead the dough scraps again and cut out more circles.
  4. 4. Place a spoonful of filling in the center of each dough circle, fold the circle in half, and press the edges firmly with a fork. Place on a greased baking sheet, brush with beaten egg yolk, and let rise for another 20 minutes. Bake at 200°C fan-forced for about 15-20 minutes until golden brown.
