🍽️ Peach Twists with Lime Glaze

Ingredients
- 400 g Peaches (3 Peaches)
- 1 Lime
- 50 g dried Cranberries
- 200 g Wheat Flour Type 1050
- 2 tsp Baking Powder
- 100 g Low-fat Quark
- 4 tbsp Milk (1,5 % Fat)
- 40 ml Rapeseed Oil
- 60 g Powdered Sugar from Raw Cane Sugar (6 tbsp)
Instructions
- 1. Wash the peaches thoroughly and pat them dry.
- 2. Cut the peaches in half and remove the pits.
- 3. Cut the peach halves into small cubes of about one centimeter.
- 4. Rinse the lime under hot water and dry it thoroughly.
- 5. Grate the fine, colorful zest of the lime finely.
- 6. Cut the lime in half and squeeze out the juice.
- 7. Chop the cranberries very finely with a large knife.
- 8. Place the chopped cranberries into a bowl.
- 9. Add the grated lime zest to the cranberries.
- 10. Add the peach cubes to the mixture.
- 11. Mix all the filling ingredients well together.
- 12. Put the wheat flour and baking powder into a large mixing bowl.
- 13. Add the quark to the bowl.
- 14. Pour in the milk.
- 15. Add the rapeseed oil.
- 16. Process the ingredients with the dough hooks of a hand mixer to form a smooth dough.
- 17. Lightly dust a work surface with flour.
- 18. Roll out the dough on the floured surface into a rectangle measuring 30 by 40 centimeters.
- 19. Spread the peach-cranberry mixture evenly over the dough.
- 20. Leave a two-centimeter-wide border free on both long sides.
- 21. Roll the dough up tightly from one of the long sides.
- 22. Cut the dough roll into 14 equal slices.
- 23. Line a baking tray with baking paper.
- 24. Place the dough twists on the tray with some space between them.
- 25. Preheat the oven.
- 26. Bake the twists on the middle rack at 200 degrees Celsius conventional heat.
- 27. Alternatively, use 180 degrees Celsius fan-forced heat or gas mark 3.
- 28. Bake the twists for about 25 minutes until golden brown.
- 29. Remove the finished dough twists from the oven.
- 30. Place them on a cake rack or the inverted oven rack.
- 31. Let the twists cool down completely.
- 32. Put two to three teaspoons of lime juice into a small bowl.
- 33. Whisk the juice with powdered sugar to form a thick glaze.
- 34. Fill the glaze into a small freezer bag.
- 35. Cut off a small corner of the bag.
- 36. Pipe the glaze onto the lukewarm peach twists.
- 37. Let the decorated twists cool for about 40 minutes.
