  1. 1. Wash the peaches thoroughly and pat them dry.
  2. 2. Cut the peaches in half and remove the pits.
  3. 3. Cut the peach halves into small cubes of about one centimeter.
  4. 4. Rinse the lime under hot water and dry it thoroughly.
  5. 5. Grate the fine, colorful zest of the lime finely.
  6. 6. Cut the lime in half and squeeze out the juice.
  7. 7. Chop the cranberries very finely with a large knife.
  8. 8. Place the chopped cranberries into a bowl.
  9. 9. Add the grated lime zest to the cranberries.
  10. 10. Add the peach cubes to the mixture.
  11. 11. Mix all the filling ingredients well together.
  12. 12. Put the wheat flour and baking powder into a large mixing bowl.
  13. 13. Add the quark to the bowl.
  14. 14. Pour in the milk.
  15. 15. Add the rapeseed oil.
  16. 16. Process the ingredients with the dough hooks of a hand mixer to form a smooth dough.
  17. 17. Lightly dust a work surface with flour.
  18. 18. Roll out the dough on the floured surface into a rectangle measuring 30 by 40 centimeters.
  19. 19. Spread the peach-cranberry mixture evenly over the dough.
  20. 20. Leave a two-centimeter-wide border free on both long sides.
  21. 21. Roll the dough up tightly from one of the long sides.
  22. 22. Cut the dough roll into 14 equal slices.
  23. 23. Line a baking tray with baking paper.
  24. 24. Place the dough twists on the tray with some space between them.
  25. 25. Preheat the oven.
  26. 26. Bake the twists on the middle rack at 200 degrees Celsius conventional heat.
  27. 27. Alternatively, use 180 degrees Celsius fan-forced heat or gas mark 3.
  28. 28. Bake the twists for about 25 minutes until golden brown.
  29. 29. Remove the finished dough twists from the oven.
  30. 30. Place them on a cake rack or the inverted oven rack.
  31. 31. Let the twists cool down completely.
  32. 32. Put two to three teaspoons of lime juice into a small bowl.
  33. 33. Whisk the juice with powdered sugar to form a thick glaze.
  34. 34. Fill the glaze into a small freezer bag.
  35. 35. Cut off a small corner of the bag.
  36. 36. Pipe the glaze onto the lukewarm peach twists.
  37. 37. Let the decorated twists cool for about 40 minutes.
