  1. 1. Mix the flour with the salt.
  2. 2. Add the oil and about 3 to 4 tablespoons of tap water.
  3. 3. Knead everything into a firm dough that no longer sticks to the bowl.
  4. 4. If the dough is too sticky, add a little more flour.
  5. 5. Wrap the dough in foil and let it rest for about 15 minutes.
  6. 6. Wash the tomatoes and pat them dry.
  7. 7. Cut the tomatoes into quarters or eighths, depending on their size.
  8. 8. You should end up with a total of 12 tomato pieces.
  9. 9. Place the tomato pieces on a baking sheet that you have greased with olive oil.
  10. 10. Season the tomatoes with salt, sugar, and pepper.
  11. 11. Drizzle them with garlic oil.
  12. 12. Preheat the oven to 200 degrees Celsius with fan (convection).
  13. 13. Place a wooden spoon handle in the oven door to keep it slightly ajar.
  14. 14. Place the baking sheet on the middle rack.
  15. 15. Roast the tomatoes for about 30 to 40 minutes.
  16. 16. Take the dough out of the foil.
  17. 17. Knead the dough vigorously for about 5 minutes.
  18. 18. Divide the dough into 12 equal portions.
  19. 19. Heat the oil for frying to 160 degrees Celsius.
  20. 20. Shape each dough portion into a ball.
  21. 21. Roll the balls briefly in flour.
  22. 22. Press one ball into a greased tartlet mold.
  23. 23. Hollow out the center so that the edge becomes very thin.
  24. 24. Alternatively, you can use a mini muffin tin or a shot glass.
  25. 25. Place each pastry cup immediately into the hot oil.
  26. 26. Fry the cups until golden brown so they hold their shape.
  27. 27. Remove the cups with a slotted spoon.
  28. 28. Let them drain on kitchen paper.
  29. 29. Take the tomatoes out of the oven.
  30. 30. Place one tomato piece into each pastry cup.
  31. 31. Garnish the cups with fresh thyme.
  32. 32. Serve the dish immediately.
