🍽️ Crispy Pastry Cups with Roasted Tomatoes

Ingredients
- 150 g flour
- 1 tsp olive oil
- 0.5 tsp salt
- flour (for the work surface)
- oil (for frying)
- 3 tomatoes
- olive oil (for the baking sheet)
- salt
- 1 pinch sugar
- pepper
- 1 tbsp garlic oil
- fresh thyme (for garnish)
Instructions
- 1. Mix the flour with the salt.
- 2. Add the oil and about 3 to 4 tablespoons of tap water.
- 3. Knead everything into a firm dough that no longer sticks to the bowl.
- 4. If the dough is too sticky, add a little more flour.
- 5. Wrap the dough in foil and let it rest for about 15 minutes.
- 6. Wash the tomatoes and pat them dry.
- 7. Cut the tomatoes into quarters or eighths, depending on their size.
- 8. You should end up with a total of 12 tomato pieces.
- 9. Place the tomato pieces on a baking sheet that you have greased with olive oil.
- 10. Season the tomatoes with salt, sugar, and pepper.
- 11. Drizzle them with garlic oil.
- 12. Preheat the oven to 200 degrees Celsius with fan (convection).
- 13. Place a wooden spoon handle in the oven door to keep it slightly ajar.
- 14. Place the baking sheet on the middle rack.
- 15. Roast the tomatoes for about 30 to 40 minutes.
- 16. Take the dough out of the foil.
- 17. Knead the dough vigorously for about 5 minutes.
- 18. Divide the dough into 12 equal portions.
- 19. Heat the oil for frying to 160 degrees Celsius.
- 20. Shape each dough portion into a ball.
- 21. Roll the balls briefly in flour.
- 22. Press one ball into a greased tartlet mold.
- 23. Hollow out the center so that the edge becomes very thin.
- 24. Alternatively, you can use a mini muffin tin or a shot glass.
- 25. Place each pastry cup immediately into the hot oil.
- 26. Fry the cups until golden brown so they hold their shape.
- 27. Remove the cups with a slotted spoon.
- 28. Let them drain on kitchen paper.
- 29. Take the tomatoes out of the oven.
- 30. Place one tomato piece into each pastry cup.
- 31. Garnish the cups with fresh thyme.
- 32. Serve the dish immediately.
