🍽️ Yeast dough with hop bran

Ingredients
- 200 g flour
- 0.5 cube fresh yeast (20 g)
- 0.5 tsp sugar
- 1 tsp salt
- 3 hops
- 300 ml water
- 200 g wheat bran
- 1 pinch anise
- coriander
- 1 caraway
Instructions
- 1. Dissolve the yeast and the sugar in 100 milliliters of lukewarm water.
- 2. Let the yeast mixture stand for about 10 minutes.
- 3. Put the flour and the salt into a large mixing bowl.
- 4. Pour the yeast liquid over the flour and salt.
- 5. Knead everything into a smooth dough using the dough hooks of a hand mixer.
- 6. Let the dough rise in a warm place for about 45 minutes.
- 7. Boil the hops for 3 minutes in about 40 milliliters of water.
- 8. Let the hop liquid cool down covered.
- 9. Strain the cooled liquid into a bowl.
- 10. Squeeze the remaining water out of the hops.
- 11. Add the wheat bran to the strained liquid.
- 12. Mix the bran with the spices.
- 13. Mix the thick hop-bran mass thoroughly with the yeast dough.
- 14. If necessary, add a little more wheat bran until the dough is easy to shape.
- 15. Shape walnut-sized dumplings with slightly floured hands.
- 16. Place the dumplings in rows on a baking sheet lined with baking paper.
- 17. Preheat the oven to 180 degrees Celsius.
- 18. Bake the dough in the preheated oven.
- 19. Then let the dumplings dry in the lukewarm oven with the door open.
- 20. Halve the dumplings during drying if desired.
- 21. Let the dough dumplings cool completely.
- 22. Grind the cooled dumplings into powder or crumble them finely.
- 23. Store the powder in a dry place.
- 24. Add one tablespoon of the powder to 500 grams of flour when baking bread.
- 25. Preferably use spelt flour for the bread.
