  1. 1. Soak the gelatin in a bowl of cold water.
  2. 2. Bring 150 milliliters of water to a boil.
  3. 3. Let the hot water cool down for about two minutes until it reaches around 70 degrees Celsius.
  4. 4. Add the tea to the warm water and let it steep for two minutes.
  5. 5. Remove the tea leaves from the liquid.
  6. 6. Squeeze the soaked gelatin well and add it to the tea.
  7. 7. Stir until the gelatin has completely dissolved.
  8. 8. Sweeten the mixture with honey to taste.
  9. 9. Let the sweetened tea cool down.
  10. 10. Stir the cream and yogurt into the cooled tea.
  11. 11. Season the mixture with a splash of rice wine.
  12. 12. Pour the liquid into a siphon (foam dispenser) suitable for whipped cream.
  13. 13. Shake the siphon vigorously to mix the ingredients.
  14. 14. Place the siphon in the refrigerator for about three hours.
  15. 15. Toast sesame seeds and poppy seeds in a pan without fat until they are fragrant.
  16. 16. Remove the toasted seeds from the pan.
  17. 17. Let the seeds cool down completely.
  18. 18. Shake the siphon vigorously once towards the nozzle just before serving.
  19. 19. Spray the tea foam into four glasses.
  20. 20. Sprinkle the foam with the cooled sesame and poppy seed mixture.
  21. 21. Serve the foam immediately.
