🥤 Airy Tea Foam with Sesame and Poppy Seeds

Ingredients
- 3 sheets white gelatin
- 1 tsp green tea (e.g. Sencha)
- 4 tbsp honey
- 150 ml whipping cream
- 200 g yogurt
- 1 tbsp rice wine
- 1 tbsp sesame
- 1 tbsp poppy seed
Instructions
- 1. Soak the gelatin in a bowl of cold water.
- 2. Bring 150 milliliters of water to a boil.
- 3. Let the hot water cool down for about two minutes until it reaches around 70 degrees Celsius.
- 4. Add the tea to the warm water and let it steep for two minutes.
- 5. Remove the tea leaves from the liquid.
- 6. Squeeze the soaked gelatin well and add it to the tea.
- 7. Stir until the gelatin has completely dissolved.
- 8. Sweeten the mixture with honey to taste.
- 9. Let the sweetened tea cool down.
- 10. Stir the cream and yogurt into the cooled tea.
- 11. Season the mixture with a splash of rice wine.
- 12. Pour the liquid into a siphon (foam dispenser) suitable for whipped cream.
- 13. Shake the siphon vigorously to mix the ingredients.
- 14. Place the siphon in the refrigerator for about three hours.
- 15. Toast sesame seeds and poppy seeds in a pan without fat until they are fragrant.
- 16. Remove the toasted seeds from the pan.
- 17. Let the seeds cool down completely.
- 18. Shake the siphon vigorously once towards the nozzle just before serving.
- 19. Spray the tea foam into four glasses.
- 20. Sprinkle the foam with the cooled sesame and poppy seed mixture.
- 21. Serve the foam immediately.
