🥤 Simple Tea Cream

Ingredients
- 5 sheets white gelatin
- 2 tsp matcha tea powder
- 4 egg yolks
- 100 g sugar
- 200 ml milk
- 20 ml white rum
- 400 g whipping cream
- 500 g exotic fruits chopped small (e.g. melon balls and pieces, kumquats, figs, limes etc.)
Instructions
- 1. Soak the gelatin in a bowl of cold water.
- 2. Bring the milk to a boil in a pot.
- 3. Stir the tea powder into the hot milk.
- 4. Let the tea milk cool down completely.
- 5. Squeeze the soaked gelatin well.
- 6. Whisk the egg yolks with the sugar in a bowl over a water bath until frothy.
- 7. Dissolve the squeezed gelatin into the egg yolk-sugar mixture.
- 8. Stir the cooled tea milk into the egg yolk mixture.
- 9. Stir the rum into the tea milk-egg yolk mixture.
- 10. Whip the cream until stiff.
- 11. Gently fold the whipped cream into the tea milk mixture.
- 12. Fill the cream into molds.
- 13. Let the cream set in the refrigerator.
- 14. Dip the molds briefly in hot water.
- 15. Invert the cream onto dessert plates.
- 16. Garnish the cream with fruit salad.
