  1. 1. Wash the lime thoroughly and pat it dry.
  2. 2. Cut the lime in half.
  3. 3. Cut a thin slice from one half.
  4. 4. Cut this slice into four small wedges.
  5. 5. Set aside the lime wedges for garnishing later.
  6. 6. Grate some fine zest from the lime.
  7. 7. Set the zest aside for garnishing as well.
  8. 8. Squeeze the juice from both lime halves.
  9. 9. Clean the spring onions and wash them.
  10. 10. Dry the spring onions with a cloth.
  11. 11. Chop the spring onions very finely.
  12. 12. Remove the seeds from the chili and chop the flesh very finely.
  13. 13. Pat the scallops dry with a cloth.
  14. 14. Cut the scallops into very small cubes.
  15. 15. Mix the scallop cubes with the chili, spring onions, parsley, some lime juice, salt, and pepper.
  16. 16. Peel the mango and cut the flesh away from the pit.
  17. 17. Cut the mango flesh into 1 cm cubes.
  18. 18. Marinate the mango cubes with lime juice, cayenne pepper, and a little salt.
  19. 19. Divide the marinated mango cubes among four glasses.
  20. 20. Place the scallop tatar on top of the mango.
  21. 21. Garnish the dish with the lime wedges and zest.
  22. 22. Serve the tatar immediately.
