🍽️ Scallop Tatar with Mango and Lime Zest

Ingredients
- 6 scallops (without roe, very fresh)
- 1 tbsp chopped parsley
- 1 spring onion (only the white part)
- 0.5 small red chili pepper
- 2 limes
- salt
- white pepper
- cayenne pepper
- 2 tbsp argan oil
Instructions
- 1. Wash the lime thoroughly and pat it dry.
- 2. Cut the lime in half.
- 3. Cut a thin slice from one half.
- 4. Cut this slice into four small wedges.
- 5. Set aside the lime wedges for garnishing later.
- 6. Grate some fine zest from the lime.
- 7. Set the zest aside for garnishing as well.
- 8. Squeeze the juice from both lime halves.
- 9. Clean the spring onions and wash them.
- 10. Dry the spring onions with a cloth.
- 11. Chop the spring onions very finely.
- 12. Remove the seeds from the chili and chop the flesh very finely.
- 13. Pat the scallops dry with a cloth.
- 14. Cut the scallops into very small cubes.
- 15. Mix the scallop cubes with the chili, spring onions, parsley, some lime juice, salt, and pepper.
- 16. Peel the mango and cut the flesh away from the pit.
- 17. Cut the mango flesh into 1 cm cubes.
- 18. Marinate the mango cubes with lime juice, cayenne pepper, and a little salt.
- 19. Divide the marinated mango cubes among four glasses.
- 20. Place the scallop tatar on top of the mango.
- 21. Garnish the dish with the lime wedges and zest.
- 22. Serve the tatar immediately.
