  2. 2. Pat the fish dry with a kitchen towel.
  3. 3. Cut the salmon fillet into very small cubes.
  4. 4. Peel the shallot.
  5. 5. Dice the shallot very finely.
  6. 6. Peel the cucumber piece.
  7. 7. Cut the cucumber in half lengthwise.
  8. 8. Remove the seeds from one half of the cucumber.
  9. 9. Dice the deseeded cucumber half into small pieces.
  10. 10. Cut the remaining part of the cucumber into thin strips using a peeler.
  11. 11. Rinse the lime half with hot water.
  12. 12. Dry the lime.
  13. 13. Grate the zest of the lime.
  14. 14. Squeeze the juice from the lime.
  15. 15. Mix the salmon cubes with the shallot.
  16. 16. Add the cucumber cubes.
  17. 17. Add the lime juice.
  18. 18. Add the lime zest.
  19. 19. Add the oil.
  20. 20. Season the mixture with salt.
  21. 21. Season the mixture with pepper.
  22. 22. Shape the mixture into small half-spheres.
