🍽️ Classic Beef Tartare with Egg

Ingredients
- 400 g beef mince (lean, boneless)
- 4 fresh egg yolks
- 4 anchovy fillets
- 2 onions
- 4 sour pickles
- 1 tbsp capers
- 16 olives (to taste)
- grated horseradish
- mustard
- salt
- pepper
- bell peppers
- 4 rye rolls (or dark bread)
Instructions
- 1. Take the raw ground beef and divide it into four equal portions.
- 2. Shape each portion into a flat, round mound on its own plate.
- 3. Press a small indentation into the center of each meat mound using your thumb.
- 4. Place one raw egg into each of the indentations.
- 5. Rinse the anchovy fillets under cold running water to reduce their saltiness.
- 6. Peel the onions and remove the hard outer skin.
- 7. Finely chop the anchovies, the peeled onions, the cucumbers, and the capers together.
- 8. Distribute the fine mixture evenly over the plates with the meat and egg.
- 9. Serve the tartare immediately along with one rye roll per person.
