🍽️ Tasmanian Prawns with Melon and Yogurt Sauce

Ingredients
- 800 g Tiger Prawn (deveined and peeled except for the tail segment)
- 1 Honeydew Melon
- 1 Spring Onion
- 4 tbsp Lime Juice (freshly squeezed)
- 1 tbsp Lemon Juice (freshly squeezed)
- 3 tbsp Organic Lemon Zest
- 4 tbsp Yogurt (1.5% fat)
- Salt
- Pepper (freshly ground)
- Sesame Oil
Instructions
- 1. Halve the honeydew melon and remove the seeds.
- 2. Cut the melon into wedges and remove the rind.
- 3. Dice the flesh into small cubes.
- 4. Clean the spring onions and wash them.
- 5. Slice the spring onions into small rings.
- 6. Mix the melon cubes with the spring onion rings.
- 7. Whisk the yogurt with one tablespoon of oil.
- 8. Add the lemon juice, salt, and pepper to the yogurt mixture.
- 9. Heat two tablespoons of oil in a pan.
- 10. Fry the prawns in it for two to three minutes until golden brown.
- 11. Season the prawns with salt, pepper, and lime juice.
- 12. Place the melon and onion mixture on the plates.
- 13. Distribute the prawns over the melon mixture.
- 14. Drizzle the dish with the yogurt sauce.
- 15. Sprinkle everything with lemon zest and serve.
