Ingredients
- 8 not too large clams
- 1 piece ginger (8 cm)
- 4 garlic cloves
- Light soy sauce
- Sesame oil
- 2 chili peppers
- 3 stalks lemongrass
- 2 large onions
- Fish sauce
Instructions
- 1. Pour about 4 liters of water into a large pot.
- 2. Peel the ginger and cut it into small cubes.
- 3. Peel the garlic cloves and dice them as well.
- 4. Finely chop the chili peppers.
- 5. Peel the onions and cut them into cubes.
- 6. Wash the lemongrass and cut it into 2-centimeter-long pieces.
- 7. Add the ginger, garlic, chili, onions, and lemongrass to the water.
- 8. Add 100 milliliters of soy sauce and 50 milliliters of fish sauce.
- 9. Bring the mixture to a boil.
- 10. Let the broth bubble vigorously for about 5 minutes.
- 11. Reduce the heat and place the clams into the boiling water.
- 12. Cook the clams for about 15 to 20 minutes.
- 13. Lift the clams out of the pot.
- 14. Carefully crack the shells using a small hammer or a crab cracker.
- 15. Remove the meat from the shells.
- 16. Drizzle the cooking broth over the clam meat.
- 17. Serve the dish.
