  1. 1. Rinse the scallops under cold water.
  2. 2. Pat the scallops dry with a kitchen towel.
  3. 3. Dice the scallops into very small cubes.
  4. 4. Wash the chives under running water.
  5. 5. Shake the chives dry.
  6. 6. Slice the chives into fine rings.
  7. 7. Shave the black truffle into thin slices.
  8. 8. Set aside about three truffle slices for garnish.
  9. 9. Finely chop the remaining truffle.
  10. 10. Place the diced scallops into a bowl.
  11. 11. Add the chopped truffle pieces.
  12. 12. Add the chive rings.
  13. 13. Drizzle the lemon juice over the mixture.
  14. 14. Add the oil.
  15. 15. Mix all ingredients thoroughly.
  16. 16. Season the tartare with salt.
  17. 17. Season the tartare with pepper.
  18. 18. Pack the mixture into a small mold (approx. 7 cm diameter).
  19. 19. Invert the mold to release the tartare onto an appetizer plate.
  20. 20. Garnish the tartare with the reserved truffle slices.
  21. 21. Serve the tartare immediately.
