🍽️ Scallop Tartare with Black Truffle

Ingredients
- 8 scallops (without roe, very fresh)
- 5 chives
- 25 g black truffle (as desired, more or less)
- 2 tbsp lemon juice
- 2 tbsp olive oil
- salt
- white pepper
Instructions
- 1. Rinse the scallops under cold water.
- 2. Pat the scallops dry with a kitchen towel.
- 3. Dice the scallops into very small cubes.
- 4. Wash the chives under running water.
- 5. Shake the chives dry.
- 6. Slice the chives into fine rings.
- 7. Shave the black truffle into thin slices.
- 8. Set aside about three truffle slices for garnish.
- 9. Finely chop the remaining truffle.
- 10. Place the diced scallops into a bowl.
- 11. Add the chopped truffle pieces.
- 12. Add the chive rings.
- 13. Drizzle the lemon juice over the mixture.
- 14. Add the oil.
- 15. Mix all ingredients thoroughly.
- 16. Season the tartare with salt.
- 17. Season the tartare with pepper.
- 18. Pack the mixture into a small mold (approx. 7 cm diameter).
- 19. Invert the mold to release the tartare onto an appetizer plate.
- 20. Garnish the tartare with the reserved truffle slices.
- 21. Serve the tartare immediately.
