Ingredients
- 100 g Tarhana flour (Turkish specialty store)
- 1 l vegetable broth
- 1 tbsp butter
- 1 tbsp tomato paste
- paprika powder
- 1 tbsp mint (dried)
- salt
- pepper (from the mill)
- mint (for garnish)
Instructions
- 1. Stir the tarhana flour into the cold broth and simmer in a pot over low heat for about 15 minutes, stirring constantly.
- 2. Fry the tomato paste in heated butter and then add it to the soup. Season with salt, pepper, paprika, and mint.
- 3. Serve the soup garnished with fresh mint leaves.
