  1. 1. Add spelt flour, baking powder, cocoa powder, whole cane sugar, salt, Bourbon vanilla, and cardamom to a large mixing bowl.
  2. 2. Cut the butter into small cubes.
  3. 3. Add the butter cubes and the milk to the flour mixture.
  4. 4. Knead everything with the dough hooks of a hand mixer until you have a smooth dough.
  5. 5. Dust your work surface with some flour.
  6. 6. Roll out the dough on the floured surface to a thickness of about 3 millimeters.
  7. 7. Line three baking sheets with baking paper.
  8. 8. Cut out fir tree shapes with a size of 6.5 centimeters from the dough.
  9. 9. Place the cut-out trees on the prepared baking sheets.
  10. 10. Preheat the oven.
  11. 11. Set the oven temperature to 180 degrees Celsius top/bottom heat.
  12. 12. If you use fan-assisted baking, set it to 160 degrees Celsius.
  13. 13. If you use gas, set it to level 2–3.
  14. 14. Slide the trays onto the middle rack.
  15. 15. Bake the fir trees for about 10 minutes.
  16. 16. Remove the trays from the oven.
  17. 17. Lift the fir trees, each with the baking paper, onto a large cooling rack.
  18. 18. Let the trees cool down completely.
  19. 19. Fill a small saucepan with water to about two-thirds full.
  20. 20. Bring the water to a boil over high heat.
  21. 21. Reduce the heat to the lowest setting.
  22. 22. The water should only simmer gently.
  23. 23. Chop the white couverture chocolate into small pieces.
  24. 24. Place half of the chocolate pieces into a small metal bowl.
  25. 25. Place the metal bowl over the pot with the hot water.
  26. 26. Melt the chocolate over low heat in the hot water bath.
  27. 27. Add the remaining chocolate pieces.
  28. 28. Melt the rest as well until everything is smooth.
  29. 29. Pour the melted chocolate into a small freezer bag.
  30. 30. Cut off a small corner of the freezer bag.
  31. 31. Pipe the chocolate as "snow" onto the cooled fir trees.
  32. 32. Let the chocolate dry completely.
  33. 33. Carefully separate the fir trees from the baking paper.
