🍽️ Moroccan Beef Tajine with Zucchini and Beans

Ingredients
- 800 g beef (e.g. shoulder)
- 2 tomatoes
- 2 onions
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tsp freshly grated ginger
- 0.5 tsp ground turmeric
- 0.5 tsp ground cumin
- 1 pinch cinnamon
- 2 tbsp tomato paste
- 200 ml meat broth
- 1 large zucchini
- 200 g green beans
- lemon juice
- cayenne pepper
Instructions
- 1. Rinse the beef under cold water and pat it completely dry with a kitchen towel.
- 2. Cut the dry meat into bite-sized cubes.
- 3. Wash the tomatoes thoroughly, remove the green stems, and dice them finely.
- 4. Peel the onions, halve them, and slice them into thin strips.
- 5. Peel the garlic and chop it finely.
- 6. Heat some oil in the tajine (a traditional Moroccan cooking pot) and sear the meat in it.
- 7. Add the onions, garlic, tomatoes, ginger, turmeric, cumin, and cinnamon to the tajine.
- 8. Stir in the tomato paste and sauté the mixture briefly.
- 9. Deglaze the mixture with some broth.
- 10. Season with salt, cover the tajine, and let the meat simmer on low heat for about 45 minutes.
- 11. Add a little more broth if necessary to prevent the dish from drying out.
- 12. Cut the zucchini into small pieces and add them to the tajine.
- 13. Add the drained beans and let everything cook for another 10 to 15 minutes.
- 14. Finally, season the finished dish to taste with lemon juice, pepper, and salt.
- 15. Serve the tajine hot with couscous as a side dish.
