  1. 1. Rinse the beef under cold water and pat it completely dry with a kitchen towel.
  2. 2. Cut the dry meat into bite-sized cubes.
  3. 3. Wash the tomatoes thoroughly, remove the green stems, and dice them finely.
  4. 4. Peel the onions, halve them, and slice them into thin strips.
  5. 5. Peel the garlic and chop it finely.
  6. 6. Heat some oil in the tajine (a traditional Moroccan cooking pot) and sear the meat in it.
  7. 7. Add the onions, garlic, tomatoes, ginger, turmeric, cumin, and cinnamon to the tajine.
  8. 8. Stir in the tomato paste and sauté the mixture briefly.
  9. 9. Deglaze the mixture with some broth.
  10. 10. Season with salt, cover the tajine, and let the meat simmer on low heat for about 45 minutes.
  11. 11. Add a little more broth if necessary to prevent the dish from drying out.
  12. 12. Cut the zucchini into small pieces and add them to the tajine.
  13. 13. Add the drained beans and let everything cook for another 10 to 15 minutes.
  14. 14. Finally, season the finished dish to taste with lemon juice, pepper, and salt.
  15. 15. Serve the tajine hot with couscous as a side dish.
