🍽️ Lamb Tajine with Chickpeas and Orange

Ingredients
- 800 g lamb meat (kitchen-ready, shoulder)
- 2 onions
- 1.5 cm fresh ginger
- 1 clove garlic
- 400 g chickpeas (can)
- 1 unpeeled orange
- 2 tbsp ghee
- 0.5 tsp ground turmeric
- 0.5 tsp ground cumin
- 1 pinch ground coriander
- 1 pinch ground cinnamon
- 400 g chopped tomatoes (can)
- 150 ml meat broth
- salt
- pepper (from the mill)
- 2 tbsp roasted almond slivers
- parsley (for garnish)
Instructions
- 1. Rinse the meat under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into bite-sized cubes.
- 3. Peel the onions, ginger, and garlic.
- 4. Finely chop the onions, ginger, and garlic.
- 5. Drain the chickpeas in a sieve.
- 6. Peel the orange and remove the white pith as well.
- 7. Slice the orange flesh into rounds.
- 8. Heat ghee in the tajine.
- 9. Sear the meat in the hot ghee.
- 10. Add the chopped onions, garlic, ginger, and spices to the tajine.
- 11. Let the ingredients sweat for a short time.
- 12. Pour the tomatoes into the tajine.
- 13. Add the broth.
- 14. Close the lid of the tajine.
- 15. Simmer the dish over medium heat for about 45 minutes.
- 16. Add the orange slices to the tajine.
- 17. Add the chickpeas to the tajine.
- 18. Stir everything well.
- 19. Let the dish simmer for another 15 minutes.
- 20. Season the dish with salt and pepper.
- 21. Sprinkle the finished dish with slivered almonds.
- 22. Garnish the dish with parsley.
- 23. Serve the tajine warm.
