  1. 1. Rinse the chicken thoroughly and pat it dry with a kitchen towel.
  2. 2. Cut the chicken into 8 equal pieces.
  3. 3. Slice the lemons into thin rounds.
  4. 4. Peel the onions and garlic and dice them finely.
  5. 5. Roughly chop the fresh herbs.
  6. 6. Place the chicken pieces, lemon slices, onions, garlic, and herbs into the tajine.
  7. 7. Season everything with the specified spices.
  8. 8. Pour the cold vegetable broth over the ingredients.
  9. 9. Place the lid on the tajine.
  10. 10. Bring the contents to a boil on the stove.
  11. 11. Simmer the dish on low heat for 30 minutes.
  12. 12. Pour the boiled vegetable broth over the couscous.
  13. 13. Let the couscous swell for about 10 minutes.
  14. 14. Fluff the couscous with a fork afterwards.
  15. 15. Add the finely diced onions and garlic to the tajine.
  16. 16. Add the chopped olives.
  17. 17. Mix everything well together.
  18. 18. Let the dish cook for another 5 to 10 minutes.
  19. 19. Season to taste with lemon juice, salt, and pepper at the end.
  20. 20. Serve the chicken on top of the prepared couscous.
