🍽️ Chicken Tajine with Olives and Lemon

Ingredients
- 1 chicken (approx. 1.2 kg)
- 2 onions
- 50 g green olives (pitted)
- 400 ml chicken broth
- 0.5 bunch parsley
- 0.5 bunch cilantro
- 2 garlic cloves
- 0.5 tsp cumin
- 0.5 tsp ginger powder
- 1 pinch saffron
- 100 g preserved lemons (specialty store, jar or can)
- 250 g couscous (instant)
- 250 ml vegetable broth
- lemon juice
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the chicken thoroughly and pat it dry with a kitchen towel.
- 2. Cut the chicken into 8 equal pieces.
- 3. Slice the lemons into thin rounds.
- 4. Peel the onions and garlic and dice them finely.
- 5. Roughly chop the fresh herbs.
- 6. Place the chicken pieces, lemon slices, onions, garlic, and herbs into the tajine.
- 7. Season everything with the specified spices.
- 8. Pour the cold vegetable broth over the ingredients.
- 9. Place the lid on the tajine.
- 10. Bring the contents to a boil on the stove.
- 11. Simmer the dish on low heat for 30 minutes.
- 12. Pour the boiled vegetable broth over the couscous.
- 13. Let the couscous swell for about 10 minutes.
- 14. Fluff the couscous with a fork afterwards.
- 15. Add the finely diced onions and garlic to the tajine.
- 16. Add the chopped olives.
- 17. Mix everything well together.
- 18. Let the dish cook for another 5 to 10 minutes.
- 19. Season to taste with lemon juice, salt, and pepper at the end.
- 20. Serve the chicken on top of the prepared couscous.
