  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Peel the carrots and cut them lengthwise into four strips.
  3. 3. Peel the potatoes and cut them into wedges.
  4. 4. Peel the onions and cut them into approximately 2-centimeter cubes.
  5. 5. Rinse the sardines and pat them dry with a kitchen towel.
  6. 6. Peel the garlic and chop it roughly.
  7. 7. Crush the garlic into a fine paste using a mortar.
  8. 8. Mix the oil, cumin, coriander, pepper, and salt with the garlic paste.
  9. 9. Coat the sardines inside and out with the spice paste.
  10. 10. Take half of the spice paste and mix it with the onion cubes.
  11. 11. Place the onions into the tajine dish.
  12. 12. Mix the remaining spice paste with the carrots and potatoes.
  13. 13. Arrange the vegetables around the edge of the dish.
  14. 14. Place the sardines in the center of the dish.
  15. 15. Cook the tajine in the preheated oven with the lid closed for about 30 minutes.
  16. 16. Remove the lid about 10 minutes before the end of the cooking time to allow the dish to finish cooking.
  17. 17. Serve the tajine with couscous on the side.
