🍽️ Fish and Vegetable Tajine in the Oven

Ingredients
- 2 carrots
- 500 g firm-cooking potatoes
- 4 red onions
- 8 fresh sardines (approx. 150 g each, ready for cooking)
- 4 garlic cloves
- 1 lemon (juice)
- 150 ml olive oil
- 1 tsp cumin (ground)
- 1 tsp coriander (ground)
- white pepper
- salt
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Peel the carrots and cut them lengthwise into four strips.
- 3. Peel the potatoes and cut them into wedges.
- 4. Peel the onions and cut them into approximately 2-centimeter cubes.
- 5. Rinse the sardines and pat them dry with a kitchen towel.
- 6. Peel the garlic and chop it roughly.
- 7. Crush the garlic into a fine paste using a mortar.
- 8. Mix the oil, cumin, coriander, pepper, and salt with the garlic paste.
- 9. Coat the sardines inside and out with the spice paste.
- 10. Take half of the spice paste and mix it with the onion cubes.
- 11. Place the onions into the tajine dish.
- 12. Mix the remaining spice paste with the carrots and potatoes.
- 13. Arrange the vegetables around the edge of the dish.
- 14. Place the sardines in the center of the dish.
- 15. Cook the tajine in the preheated oven with the lid closed for about 30 minutes.
- 16. Remove the lid about 10 minutes before the end of the cooking time to allow the dish to finish cooking.
- 17. Serve the tajine with couscous on the side.
