  1. 1. Rinse the limes under hot water.
  2. 2. Finely grate the zest of one lime.
  3. 3. Squeeze the juice of that lime.
  4. 4. Bring a large pot of water to a boil.
  5. 5. Salt the cooking water generously.
  6. 6. Cook the tagliatelle pasta al dente (firm to the bite).
  7. 7. Thoroughly wash the sugar pea pods.
  8. 8. Remove the tough stems and strings from the pods.
  9. 9. Add the prepared pods and the separate peas to the boiling salted water.
  10. 10. Boil the vegetables for about 4 minutes.
  11. 11. Drain the vegetables.
  12. 12. Rinse the vegetables immediately with cold water to stop the cooking process.
  13. 13. Let the vegetables drain well.
  14. 14. Heat some oil in a large pan.
  15. 15. Add the drained vegetables to the hot pan.
  16. 16. Sauté the vegetables briefly.
  17. 17. Deglaze the vegetables with the freshly squeezed lime juice.
  18. 18. Add the cream to the pan.
  19. 19. Season the sauce with salt and pepper.
  20. 20. Simmer the sauce over medium heat for 2 minutes.
  21. 21. Drain the cooked pasta.
  22. 22. Warm the serving plates.
  23. 23. Arrange the pasta on the warmed plates.
  24. 24. Pour the vegetables and sauce over the pasta.
  25. 25. Grate fresh parmesan over the dish.
  26. 26. Sprinkle the lime zest over it.
  27. 27. Garnish the dish with fresh mint leaves.
  28. 28. Serve the dish immediately.
