🍽️ Fresh Tagliatelle with Sugar Peas and Lime

Ingredients
- 2 unpeeled limes
- 400 g tagliatelle
- salt
- 200 g sugar snap peas
- 200 g green peas
- 1 tbsp olive oil
- 250 ml heavy cream
- 4 tbsp freshly grated parmesan
- mint (for garnishing)
Instructions
- 1. Rinse the limes under hot water.
- 2. Finely grate the zest of one lime.
- 3. Squeeze the juice of that lime.
- 4. Bring a large pot of water to a boil.
- 5. Salt the cooking water generously.
- 6. Cook the tagliatelle pasta al dente (firm to the bite).
- 7. Thoroughly wash the sugar pea pods.
- 8. Remove the tough stems and strings from the pods.
- 9. Add the prepared pods and the separate peas to the boiling salted water.
- 10. Boil the vegetables for about 4 minutes.
- 11. Drain the vegetables.
- 12. Rinse the vegetables immediately with cold water to stop the cooking process.
- 13. Let the vegetables drain well.
- 14. Heat some oil in a large pan.
- 15. Add the drained vegetables to the hot pan.
- 16. Sauté the vegetables briefly.
- 17. Deglaze the vegetables with the freshly squeezed lime juice.
- 18. Add the cream to the pan.
- 19. Season the sauce with salt and pepper.
- 20. Simmer the sauce over medium heat for 2 minutes.
- 21. Drain the cooked pasta.
- 22. Warm the serving plates.
- 23. Arrange the pasta on the warmed plates.
- 24. Pour the vegetables and sauce over the pasta.
- 25. Grate fresh parmesan over the dish.
- 26. Sprinkle the lime zest over it.
- 27. Garnish the dish with fresh mint leaves.
- 28. Serve the dish immediately.
