  1. 1. Wash the green asparagus thoroughly.
  2. 2. Trim off the woody lower ends.
  3. 3. Cut the asparagus into pieces about 3 centimeters long.
  4. 4. Bring a pot of salted water to a boil.
  5. 5. Add the asparagus pieces and cook them for 6 to 8 minutes.
  6. 6. Drain the asparagus and let it drip dry.
  7. 7. Cut the pancetta into wide strips.
  8. 8. Peel the garlic.
  9. 9. Finely chop the garlic.
  10. 10. Heat 3 tablespoons of oil in a pan.
  11. 11. Sauté the garlic in it until golden brown.
  12. 12. Add the asparagus and pancetta to the pan.
  13. 13. Toss the ingredients briefly in the hot oil.
  14. 14. Cook the tagliatelle in a pot of boiling salted water until al dente.
  15. 15. Reserve one cup of the pasta cooking water.
  16. 16. Drain the pasta.
  17. 17. Mix the pasta with the pan mixture.
  18. 18. Stir in 1 tablespoon of butter.
  19. 19. Season with pepper and lemon juice.
  20. 20. Add 1 to 2 tablespoons of the reserved cooking water if necessary.
  21. 21. Serve the tagliatelle with green asparagus immediately.
