🍽️ Tagliatelle with Green Asparagus

Ingredients
- 300 g green asparagus
- 200 g Pancetta
- 1 tbsp olive oil (cold-pressed)
- 1 clove garlic
- 1 tbsp butter
- salt
- white pepper
- 1 lemon (juice)
- 400 g Tagliatelle
Instructions
- 1. Wash the green asparagus thoroughly.
- 2. Trim off the woody lower ends.
- 3. Cut the asparagus into pieces about 3 centimeters long.
- 4. Bring a pot of salted water to a boil.
- 5. Add the asparagus pieces and cook them for 6 to 8 minutes.
- 6. Drain the asparagus and let it drip dry.
- 7. Cut the pancetta into wide strips.
- 8. Peel the garlic.
- 9. Finely chop the garlic.
- 10. Heat 3 tablespoons of oil in a pan.
- 11. Sauté the garlic in it until golden brown.
- 12. Add the asparagus and pancetta to the pan.
- 13. Toss the ingredients briefly in the hot oil.
- 14. Cook the tagliatelle in a pot of boiling salted water until al dente.
- 15. Reserve one cup of the pasta cooking water.
- 16. Drain the pasta.
- 17. Mix the pasta with the pan mixture.
- 18. Stir in 1 tablespoon of butter.
- 19. Season with pepper and lemon juice.
- 20. Add 1 to 2 tablespoons of the reserved cooking water if necessary.
- 21. Serve the tagliatelle with green asparagus immediately.
