Ingredients
- 50 g dried tomatoes
- 1 shallot
- 2 garlic cloves
- 4 tbsp olive oil
- 500 g tagliatelle
- salt
- 30 g pistachios
- pepper from the mill
- 40 g parmesan
Instructions
- 1. Cut the dried tomatoes into small pieces. Peel the shallot and garlic. Cut the shallot into fine cubes, cut the garlic into thin slices. Heat the olive oil in a pan and sauté the tomatoes, shallot, and garlic over medium heat.
- 2. Meanwhile, cook the tagliatelle in plenty of salted water according to the package instructions until al dente. Then drain and let it drain well. Fold the pistachios into the tomato mixture and season with salt and pepper.
- 3. Plate the tagliatelle together with the tomatoes and grate the parmesan over it. Serve immediately.
