Ingredients
- 1 bunch basil
- 1 bunch parsley
- 5 sprigs oregano
- 1 small sprig rosemary
- 1 clove garlic
- 1 small red chili pepper
- 100 g butter
- salt
- pepper from the mill
- 500 g tagliatelle
- 40 g parmesan (or pecorino)
Instructions
- 1. Rinse the herbs thoroughly and set aside some leaves for decoration. Finely chop the rest of the herbs. Peel the garlic and chop it finely.
- 2. Clean the chili pepper, rinse it, and cut it into small pieces. Heat two tablespoons of butter in a pan, then briefly sauté the garlic and chili. Add the remaining butter and let it melt. Season with salt and pepper.
- 3. Cook the tagliatelle in plenty of salted water according to the package instructions until al dente. Then drain the pasta and let it drip dry.
- 4. Toss the pasta with the herb-chili butter. Grate the cheese over it and garnish with the reserved herb leaves.
