🍽️ Fresh Lebanese Taboulé

Ingredients
- 3 tbsp fine bulgur
- 4 tomatoes
- 5 handfuls parsley (150 g)
- 1 lemon (juice)
- 1 pinch ground cumin
- 1 pinch ground coriander
- 5 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Put the bulgur into a bowl.
- 2. Cover the bulgur with lukewarm water.
- 3. Let the bulgur swell covered for 20 minutes.
- 4. Wash the tomatoes thoroughly.
- 5. Remove the hard stem area from the tomatoes.
- 6. Cut the tomatoes into small cubes.
- 7. Wash the parsley.
- 8. Pluck the parsley leaves from the stems.
- 9. Chop the parsley leaves finely.
- 10. Squeeze the lemon.
- 11. Put the lemon juice into a small bowl.
- 12. Add cumin to the bowl.
- 13. Add coriander to the bowl.
- 14. Add oil to the bowl.
- 15. Season the dressing with salt.
- 16. Season the dressing with pepper.
- 17. Whisk the dressing ingredients well together.
- 18. Put the swollen bulgur into a sieve.
- 19. Drain the water from the bulgur.
- 20. Squeeze the bulgur dry.
- 21. Put the bulgur into a large bowl.
- 22. Add the diced tomatoes to the bulgur.
- 23. Add the chopped parsley to the bulgur.
- 24. Pour the dressing over the vegetable mixture.
- 25. Mix everything well.
- 26. Taste the taboulé at the end.
