Ingredients
- 100 g Bulgur
- Salt
- Pepper (from the mill)
- 2 Lemons (of which the juice)
- 75 ml Olive oil
- 1 bunch Parsley
- 2 tbsp Mint
- 1 bunch Spring onions
- 3 Tomatoes
- Mint (for garnishing)
Instructions
- 1. Prepare the bulgur according to the instructions on the package and then let it cool. Transfer to a bowl, season with salt and pepper, stir in the olive oil and lemon juice, and let it sit for about 30 minutes.
- 2. Thoroughly wash, clean, and finely chop the spring onions. Wash the tomatoes, quarter them, remove the stem end, take out the seeds, and dice the flesh into small cubes.
- 3. Fold in the parsley, chopped mint, tomatoes, and spring onions into the bulgur, adjust to taste, arrange in small bowls, and serve.
