  1. 1. Rinse the meat thoroughly and pat dry with a kitchen towel. Mix a marinade from oil, wine, and lemon juice, place the meat in it, and let it marinate covered in the refrigerator for 24 hours, turning once.
  2. 2. Two hours before grilling, take the meat out of the refrigerator, let it drain well, and sear it on the grill over high heat. Then move it to a cooler part of the grill and cook for 15 minutes, turning occasionally.
  3. 3. Let the meat rest covered for five minutes. Season with salt and pepper and serve immediately. Garnish with tomatoes if desired.
