  1. 1. Rinse the meat under water and pat dry with a kitchen towel. Mix a marinade from oil, wine, lemon juice, salt, and pepper, place the meat in it, and let it marinate covered in the refrigerator for 24 hours, turning once.
  2. 2. Two hours before grilling, take the meat out of the refrigerator, let it drain well, and then sear it on the grill over high heat. Then move it to a cooler spot and cook for 10 to 12 minutes, turning occasionally. Finally, let it rest covered for 5 minutes.
