  3. 3. Mix oil, wine, lemon juice, salt, and pepper in a bowl.

  5. 5. Cover the bowl and place it in the refrigerator for 24 hours.
  6. 6. Turn the meat once during the marinating time.
  7. 7. Take the meat out of the refrigerator two hours before cooking.
  8. 8. Let the meat drain well before you cook it.
  9. 9. Heat some clarified butter in a large pan.
  10. 10. Sear the steaks on both sides over high heat.
  11. 11. Reduce the heat and continue cooking the steaks.
  12. 12. Cook the steaks for about 10 to 15 minutes, depending on your preferred doneness.
