🍽️ Sweet Spelt Apple Bread

Ingredients
- 1 Organic Orange
- 125 g Raisins
- 500 g tart Apples
- 150 g soft Butter
- 100 g Coconut Blossom Sugar
- 3 Eggs
- 50 g Apple Sauce
- 250 g Spelt Whole Wheat Flour
- 50 g ground Hazelnuts
- 3 tsp Baking Powder
Instructions
- 1. Rinse the orange under hot water and pat it dry.
- 2. Finely grate the orange peel.
- 3. Squeeze the juice from the orange.
- 4. Drizzle the raisins with the orange juice and let them soak.
- 5. Peel the apples and cut them into quarters.
- 6. Remove the core from the apple quarters.
- 7. Grate the cored apple pieces finely.
- 8. Mix the grated apples with the soaked raisins.
- 9. Grease the loaf pan with butter and dust it with flour.
- 10. Alternatively, line the pan with baking paper.
- 11. Beat the butter with a hand mixer until fluffy.
- 12. Stir the coconut blossom sugar thoroughly into the butter.
- 13. Mix the orange zest into the butter-sugar mixture.
- 14. Stir the eggs in one by one until well combined.
- 15. Fold the apple puree into the egg mixture.
- 16. Mix the flour with the nuts and the baking powder.
- 17. Stir the flour mixture quickly into the wet mixture.
- 18. Gently fold the apple-raisin mixture into the batter.
- 19. Pour the batter into the prepared pan.
- 20. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
- 21. Bake the bread for approx. 70 minutes.
- 22. Score the bread lengthwise after approx. 30 minutes.
- 23. Let the bread cool briefly in the pan after baking.
- 24. Turn the bread out of the pan.
- 25. Let the bread cool completely.
