  1. 1. Whip about two-thirds of the cream until stiff.
  2. 2. Mix the quark with the remaining liquid cream, vanilla sugar, honey, and quince jelly.
  3. 3. Fold the stiffly whipped cream into the quark mixture.
  4. 4. Chill the cream.
  5. 5. Separate the eggs and beat the egg whites with a pinch of salt until very stiff.
  6. 6. Whisk the egg yolks with the lemon zest, sugar, flour, and milk.
  7. 7. Gently fold the egg whites into the egg yolk mixture.
  8. 8. Melt a little fat in a hot pan.
  9. 9. Bake four omelettes from the mixture one after the other.
  10. 10. Pour one quarter of the mixture into the pan.
  11. 11. Bake the omelettes until golden brown over low heat.
  12. 12. Plate the cream.
  13. 13. Wash the grapes.
  14. 14. Remove the grapes from the stem.
  15. 15. Distribute the grapes on the cream.
  16. 16. Place the omelettes on the plates.
  17. 17. Dust the omelettes with powdered sugar.
  18. 18. Serve the dish.
