🍽️ Sweet Omelettes with Quark Cream

Ingredients
- 250 g whipping cream
- 300 g quark
- 3 tbsp honey
- 4 tbsp quince jelly
- 4 eggs
- salt
- 1 tsp grated lemon zest
- 40 g sugar
- 75 g flour
- 3 tbsp milk
- 2 tbsp clarified butter
- 300 g grapes (green and blue)
- powdered sugar (for dusting)
Instructions
- 1. Whip about two-thirds of the cream until stiff.
- 2. Mix the quark with the remaining liquid cream, vanilla sugar, honey, and quince jelly.
- 3. Fold the stiffly whipped cream into the quark mixture.
- 4. Chill the cream.
- 5. Separate the eggs and beat the egg whites with a pinch of salt until very stiff.
- 6. Whisk the egg yolks with the lemon zest, sugar, flour, and milk.
- 7. Gently fold the egg whites into the egg yolk mixture.
- 8. Melt a little fat in a hot pan.
- 9. Bake four omelettes from the mixture one after the other.
- 10. Pour one quarter of the mixture into the pan.
- 11. Bake the omelettes until golden brown over low heat.
- 12. Plate the cream.
- 13. Wash the grapes.
- 14. Remove the grapes from the stem.
- 15. Distribute the grapes on the cream.
- 16. Place the omelettes on the plates.
- 17. Dust the omelettes with powdered sugar.
- 18. Serve the dish.
