  1. 1. Line a small, rectangular mold with plastic wrap.
  2. 2. Lightly grease the plastic wrap with oil.
  3. 3. Slice the smoked salmon into very thin slices.
  4. 4. Use half of the salmon slices to line the bottom of the mold.
  5. 5. Place half of the sushi rice mixture onto the salmon.
  6. 6. Press the rice down firmly.
  7. 7. Wash the cucumber thoroughly.
  8. 8. Slice the cucumber into paper-thin slices.
  9. 9. Distribute the cucumber slices evenly over the rice.
  10. 10. Spread a little wasabi over the cucumber slices.
  11. 11. Add the remaining sushi rice on top.
  12. 12. Press the rice down firmly again.
  13. 13. Cover the rice with the remaining salmon slices.
  14. 14. Press the salmon down well.
  15. 15. Cut the sushi in the mold into 8 pieces using a sharp knife.
  16. 16. Carefully turn the sushi out onto a plate.
  17. 17. Remove the plastic wrap.
  18. 18. Trim the sushi pieces carefully again.
  19. 19. Lift the individual sushi pieces with a spatula.
  20. 20. Arrange the sushi on the serving plate.
  21. 21. Garnish each piece with pickled ginger.
  22. 22. Garnish each piece additionally with chive blossoms.
