🍽️ Inside-Out Sushi Rolls with Avocado, Tuna, and Mushrooms

Ingredients
- 4 Shiitake mushrooms
- 3 tbsp Sake
- 2 tsp sugar
- 4 tbsp soy sauce
- 1 piece cucumber (approx. 10 cm)
- 0.5 avocado
- 1 tbsp lemon juice
- 1 roasted nori seaweed
- 200 g ready-made sushi rice
- 1 tbsp horseradish cream
- 150 g tuna fillet
- Tarragon leaves (for garnish, or other herbs)
- 1 tbsp sweet and sour chili sauce
- 1 tbsp peanut oil
Instructions
- 1. Pour 200 milliliters of boiling water over the mushrooms and let them soak for 30 minutes.
- 2. Drain the mushrooms, but save the soaking liquid in a container.
- 3. Remove the tough stems from the mushrooms and rinse them briefly under running water.
- 4. Combine the saved soaking liquid with sake, sugar, 3 tablespoons of soy sauce, and the mushrooms in a pot.
- 5. Let the mixture simmer for 10 minutes.
- 6. Remove the mushrooms from the liquid, let them cool, and slice them into thin strips.
- 7. Wash the cucumber, pat it dry, and cut it in half lengthwise.
- 8. Scrape out the seeds from the cucumber halves and slice the flesh into strips.
- 9. Peel the avocado and slice it into strips as well.
- 10. Brush the avocado strips immediately with lemon juice to prevent them from browning.
- 11. Cut one nori sheet in half.
- 12. Line a sushi rolling mat with plastic wrap.
- 13. Place one nori half on the mat and spread half of the sushi rice over it.
- 14. Flip the nori sheet over so that the rice side is facing down on the plastic wrap.
- 15. Place the mushroom strips, avocado strips, and cucumber strips in the center of the nori sheet.
- 16. Spread the cream horseradish over the vegetables.
- 17. Roll the sushi roll tightly using the mat, but make sure not to roll up the plastic wrap.
- 18. Repeat the process with the second nori half and the remaining rice and fillings.
- 19. Cut each of the two sushi rolls into 6 equal pieces.
- 20. Slice the tuna fillet diagonally into 12 paper-thin slices.
- 21. Mix the chili sauce with the remaining soy sauce and peanut oil in a small bowl.
- 22. Stir the sauce gently with the handle of a spoon.
- 23. Arrange the sushi rolls on a plate.
- 24. Serve the sushi immediately.
