  1. 1. Pour 200 milliliters of boiling water over the mushrooms and let them soak for 30 minutes.
  2. 2. Drain the mushrooms, but save the soaking liquid in a container.
  3. 3. Remove the tough stems from the mushrooms and rinse them briefly under running water.
  4. 4. Combine the saved soaking liquid with sake, sugar, 3 tablespoons of soy sauce, and the mushrooms in a pot.
  5. 5. Let the mixture simmer for 10 minutes.
  6. 6. Remove the mushrooms from the liquid, let them cool, and slice them into thin strips.
  7. 7. Wash the cucumber, pat it dry, and cut it in half lengthwise.
  8. 8. Scrape out the seeds from the cucumber halves and slice the flesh into strips.
  9. 9. Peel the avocado and slice it into strips as well.
  10. 10. Brush the avocado strips immediately with lemon juice to prevent them from browning.
  11. 11. Cut one nori sheet in half.
  12. 12. Line a sushi rolling mat with plastic wrap.
  13. 13. Place one nori half on the mat and spread half of the sushi rice over it.
  14. 14. Flip the nori sheet over so that the rice side is facing down on the plastic wrap.
  15. 15. Place the mushroom strips, avocado strips, and cucumber strips in the center of the nori sheet.
  16. 16. Spread the cream horseradish over the vegetables.
  17. 17. Roll the sushi roll tightly using the mat, but make sure not to roll up the plastic wrap.
  18. 18. Repeat the process with the second nori half and the remaining rice and fillings.
  19. 19. Cut each of the two sushi rolls into 6 equal pieces.
  20. 20. Slice the tuna fillet diagonally into 12 paper-thin slices.
  21. 21. Mix the chili sauce with the remaining soy sauce and peanut oil in a small bowl.
  22. 22. Stir the sauce gently with the handle of a spoon.
  23. 23. Arrange the sushi rolls on a plate.
  24. 24. Serve the sushi immediately.
