🍽️ Light Surimi Grain Salad

Ingredients
- 250 g farro
- 600 ml vegetable broth
- 2 tbsp white balsamic vinegar
- 1 tsp honey
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 40 g walnut kernels
- 75 g surimi
- 75 g cocktail shrimp
- 100 g cream cheese
Instructions
- 1. Place the farro in a pot and cover it with the broth.
- 2. Simmer the farro on low heat for about 10 minutes until tender.
- 3. If the liquid evaporates too quickly, add a little more broth.
- 4. Drain the farro if there is still water left in the pot.
- 5. Whisk the vinegar, honey, oil, salt, and pepper together in a small bowl.
- 6. Pour the dressing over the warm farro and mix it in well.
- 7. Let the salad cool down until it is lukewarm.
- 8. Roughly chop the walnuts.
- 9. Pat the surimi and shrimp dry with a kitchen towel.
- 10. Cut the surimi and shrimp into small pieces.
- 11. Gently fold the walnuts, surimi, shrimp, and cream cheese into the farro.
- 12. Season the salad to taste with salt and pepper.
- 13. Fill the salad into jars and serve as desired.
