🍲 Quick Chicken Lentil Soup with Orange

Ingredients
- 2 small chicken breast fillets (200 g)
- 1 small carrot (75 g)
- 2 onions
- 1 garlic clove
- 2 tbsp olive oil
- 100 g red lentils
- 2 oranges
- 500 ml vegetable broth
- 3 sprigs parsley
- 2 tsp garam masala
- salt
- pepper
Instructions
- 1. Rinse the chicken breast under cold water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the chicken meat into approx. 2 cm cubes.
- 4. Wash the carrots thoroughly.
- 5. Remove the ends and peel the carrots.
- 6. Cut the carrots into very fine cubes.
- 7. Peel the onions and garlic.
- 8. Finely chop the onions and garlic.
- 9. Heat the oil in a large pot.
- 10. Sauté the onions and garlic in the hot oil over medium heat.
- 11. Let the vegetables become translucent for about 3 minutes.
- 12. Add the carrot cubes and chicken cubes to the pot.
- 13. Sear the ingredients briefly.
- 14. Add the red lentils to the pot.
- 15. Sauté the lentils briefly while stirring.
- 16. Squeeze the juice from approx. 1 orange (that is approx. 100 ml).
- 17. Pour the broth and orange juice into the pot.
- 18. Bring the soup to a boil.
- 19. Let the soup simmer over medium heat for about 15 minutes.
- 20. Peel the remaining orange.
- 21. Remove the peel and the white pith completely.
- 22. Carefully cut the flesh out of the membranes.
- 23. Add the orange fillets to the soup 5 minutes before the end of the cooking time.
- 24. Wash the parsley.
- 25. Shake the parsley dry.
- 26. Chop the parsley leaves.
- 27. Season the soup with Garam Masala.
- 28. Season the soup with salt and pepper to taste.
- 29. Sprinkle the finished soup with the chopped parsley.
