🍲 Wok Soup with Shiitake, Spring Onions, and Radishes

Ingredients
- 6 spring onions
- 2 garlic cloves
- fresh ginger (approx. 3 cm)
- 250 g shiitake mushrooms
- 150 g radishes
- 2 tbsp sesame oil
- 800 ml vegetable broth
- soy sauce
- rice vinegar
- 2 tbsp chive rings
Instructions
- 1. Wash the spring onions thoroughly.
- 2. Remove the tough ends and slice the onions diagonally into small pieces.
- 3. Peel the garlic clove and the ginger.
- 4. Slice the garlic into thin rounds.
- 5. Cut the ginger into small matchsticks.
- 6. Clean the shiitake mushrooms.
- 7. Cut off the tough stems of the mushrooms.
- 8. Halve the mushroom caps.
- 9. Wash the radishes.
- 10. Remove the green tops and slice the radishes into thin rounds.
- 11. Heat oil in a pan or wok.
- 12. Add the radishes, mushrooms, garlic, and ginger to the hot pan.
- 13. Sauté the vegetables briefly until fragrant.
- 14. Fold the spring onions into the vegetables.
- 15. Pour in the vegetable broth.
- 16. Let the soup simmer gently for about 8 minutes.
- 17. Season the soup with soy sauce.
- 18. Add a splash of rice vinegar.
- 19. Finely chop fresh chives.
- 20. Sprinkle the finished soup with the chives.
- 21. Serve the soup hot.
