🍽️ Sweet and Sour Pumpkin

Ingredients
- 2 kg pumpkin flesh (peeled and seeded)
- 900 g sugar
- 8 tbsp vinegar
- 0.125 l apple juice
- 1 untreated lemon
- 40 g fresh ginger
- 10 clove buds
- 3 cinnamon sticks
- 3 star anise
- 2 tsp salt
Instructions
- 1. Cut the pumpkin flesh into large cubes with a side length of about 2 centimeters.
- 2. Put sugar, a quarter liter of water, vinegar, and apple juice into a large pot.
- 3. Bring the liquid in the pot to a boil.
- 4. Add the pumpkin cubes to the boiling liquid.
- 5. Rinse the lemon thoroughly and dry it.
- 6. Use a zester to remove thin strips of the lemon peel.
- 7. Add the lemon zest to the pot.
- 8. Peel the ginger.
- 9. Slice the ginger into very thin slices.
- 10. Add the ginger slices to the pot.
- 11. Stir cloves, cinnamon sticks, star anise, and salt into the mixture.
- 12. Let everything simmer covered on low heat for 15 to 20 minutes.
- 13. Use a slotted spoon to lift the pumpkin cubes out of the pot.
- 14. Fill the pumpkin cubes into previously rinsed hot jars.
- 15. Let the liquid reduce for another 5 minutes over high heat.
- 16. Pour the reduced liquid over the pumpkin cubes in the jars.
- 17. Seal the jars tightly.
- 18. Store the jars in a cool place.
