  1. 1. Cut the pumpkin flesh into large cubes with a side length of about 2 centimeters.
  2. 2. Put sugar, a quarter liter of water, vinegar, and apple juice into a large pot.
  3. 3. Bring the liquid in the pot to a boil.
  4. 4. Add the pumpkin cubes to the boiling liquid.
  5. 5. Rinse the lemon thoroughly and dry it.
  6. 6. Use a zester to remove thin strips of the lemon peel.
  7. 7. Add the lemon zest to the pot.
  8. 8. Peel the ginger.
  9. 9. Slice the ginger into very thin slices.
  10. 10. Add the ginger slices to the pot.
  11. 11. Stir cloves, cinnamon sticks, star anise, and salt into the mixture.
  12. 12. Let everything simmer covered on low heat for 15 to 20 minutes.
  13. 13. Use a slotted spoon to lift the pumpkin cubes out of the pot.
  14. 14. Fill the pumpkin cubes into previously rinsed hot jars.
  15. 15. Let the liquid reduce for another 5 minutes over high heat.
  16. 16. Pour the reduced liquid over the pumpkin cubes in the jars.
  17. 17. Seal the jars tightly.
  18. 18. Store the jars in a cool place.
