🍽️ Crispy Sweet Potato and Salmon Patties

Ingredients
- 200 g salmon fillet
- 2 tbsp olive oil
- 1 small sweet potato (150 g each)
- 0.5 lemon
- 2 sprigs dill
- 2 sprigs parsley
- 1 egg
- 2 tbsp whole wheat breadcrumbs (15 g each)
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions
- 1. Pat the salmon dry with kitchen paper.
- 2. Heat 1 tablespoon of oil in a frying pan.
- 3. Cook the salmon over medium heat for about 5 minutes per side until fully done.
- 4. Remove the salmon from the pan and let it cool.
- 5. Finely chop the cooled salmon.
- 6. Peel the sweet potato and wash it.
- 7. Cut the sweet potato into small cubes.
- 8. Boil the sweet potato cubes in boiling water for about 10 minutes until soft.
- 9. Drain the sweet potatoes.
- 10. Mash the sweet potatoes finely.
- 11. Squeeze the lemon to get the juice.
- 12. Wash the dill and parsley.
- 13. Shake the herbs dry.
- 14. Finely chop the leaves of the dill and parsley.
- 15. Whisk the egg in a bowl.
- 16. Mix the egg with the chopped salmon.
- 17. Add the sweet potato puree to the mixture.
- 18. Add the breadcrumbs.
- 19. Add the lemon juice.
- 20. Add the chopped herbs.
- 21. Add onion and garlic powder.
- 22. Mix all ingredients well together.
- 23. Shape the mixture into patties with a size of 7 to 10 centimeters.
- 24. Heat the remaining oil in a frying pan.
- 25. Fry the sweet potato salmon patties over medium heat.
- 26. Fry the patties for about 3 to 4 minutes per side until golden brown.
