🍽️ Roasted Sweet Potatoes with Creamy Tahini Butter

Ingredients
- 4 sweet potatoes (1.6 kg)
- 1 tbsp peanut oil
- 1 clove garlic
- 100 g soft butter
- 60 g tahini (sesame paste; 4 tbsp)
- 1 tbsp lime juice
- salt
- ground cumin
- pepper
- 0.5 bunch chives (10 g)
- 1 lime
- 10 g sesame seeds (1 tbsp)
Instructions
- 1. Thoroughly wash the sweet potatoes under running water.
- 2. Cut the sweet potatoes in half lengthwise.
- 3. Place the halves in a baking dish.
- 4. Brush the sweet potatoes with oil.
- 5. Preheat the oven to 200 degrees Celsius conventional heat (180 degrees Celsius fan-forced or gas mark 3).
- 6. Bake the sweet potatoes in the oven for 30 to 35 minutes until tender.
- 7. Peel the garlic while the potatoes are baking.
- 8. Finely chop the garlic.
- 9. Stir the butter and tahini (sesame paste) together in a bowl until creamy.
- 10. Add the lime juice, salt, cumin, and pepper to the butter mixture.
- 11. Season the baked sweet potatoes with salt and pepper.
- 12. Generously brush the sweet potatoes with the tahini butter mixture.
- 13. Turn off the oven and let the sweet potatoes melt for 10 minutes in the warm oven.
- 14. Wash the chives under running water.
- 15. Shake the chives dry.
- 16. Cut the chives into fine rings.
- 17. Rinse the lime.
- 18. Cut the lime into wedges.
- 19. Remove the sweet potatoes from the oven.
- 20. Sprinkle sesame seeds and chives over the sweet potatoes.
- 21. Serve the sweet potatoes with the remaining tahini butter and lime wedges.
