🍽️ Creamy Sweet Potato and Apple Gratin with Raisins

Ingredients
- 3 tbsp raisins
- 6 tbsp apple juice
- 60 g peeled walnut kernels
- 300 g sweet potatoes
- 500 g apples
- 80 g crème fraîche
- 200 ml whipping cream
- 2 eggs
- 3 tbsp sugar-cinnamon mixture
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Soak the raisins in apple juice.
- 3. Toast the nuts in a hot pan without fat until they smell fragrant.
- 4. Remove the nuts from the pan and let them cool down.
- 5. Roughly chop the cooled nuts.
- 6. Peel the sweet potatoes and slice them into thin rounds.
- 7. Peel the apples and cut them into quarters.
- 8. Remove the core from the apple quarters.
- 9. Slice the cored apple pieces into thin strips.
- 10. Toss the apple slices with the lemon juice.
- 11. Grease a baking dish with butter.
- 12. Layer the sweet potato slices and apple slices alternately in the baking dish.
- 13. Whisk the crème fraîche with the cream, eggs, and cinnamon-sugar mixture.
- 14. Pour the cream mixture evenly over the potato and apple layers.
- 15. Drain the raisins well and sprinkle them over the gratin.
- 16. Bake the gratin in the preheated oven for about 35 minutes.
- 17. Remove the finished gratin from the oven.
- 18. Sprinkle the chopped nuts over the hot gratin.
- 19. Serve the dish immediately.
