  2. 2. Soak the raisins in apple juice.
  3. 3. Toast the nuts in a hot pan without fat until they smell fragrant.
  4. 4. Remove the nuts from the pan and let them cool down.
  5. 5. Roughly chop the cooled nuts.
  6. 6. Peel the sweet potatoes and slice them into thin rounds.
  7. 7. Peel the apples and cut them into quarters.
  8. 8. Remove the core from the apple quarters.
  9. 9. Slice the cored apple pieces into thin strips.
  10. 10. Toss the apple slices with the lemon juice.
  11. 11. Grease a baking dish with butter.
  12. 12. Layer the sweet potato slices and apple slices alternately in the baking dish.
  13. 13. Whisk the crème fraîche with the cream, eggs, and cinnamon-sugar mixture.
  14. 14. Pour the cream mixture evenly over the potato and apple layers.
  15. 15. Drain the raisins well and sprinkle them over the gratin.
  16. 16. Bake the gratin in the preheated oven for about 35 minutes.
  17. 17. Remove the finished gratin from the oven.
  18. 18. Sprinkle the chopped nuts over the hot gratin.
