  1. 1. For the vanilla sauce, combine the milk with the cream, the vanilla pod, and the scraped seeds, then bring to a boil.
  2. 2. Whisk the egg yolks with the sugar in a bowl until frothy. Then stir in the hot milk-cream mixture into the egg yolk mixture, return everything to the pot, and whisk into a sauce over low heat while stirring constantly, making sure not to let it boil.
  3. 3. Strain the vanilla sauce through a sieve, let it cool, and lightly sprinkle the surface with sugar to prevent a skin from forming.
  4. 4. Peel the sweet potatoes, wash them thoroughly, and slice them into about 0.5 cm thick slices. Arrange these in a greased baking dish in a shingled pattern.
  5. 5. Melt the butter. Add the sugar and cinnamon, then stir in the orange juice and simmer everything on low heat for 10 minutes. Smoothly mix the cornstarch with 2 tbsp water and the lemon zest, then fold it into the mixture. Pour over the sweet potatoes.
  6. 6. Place the baking dish with the potatoes in a cold oven (center) and bake at 180 °C for approx. 35 minutes, until they are soft.
  7. 7. Serve the baked sweet potatoes on plates and serve with the vanilla sauce.
