🍽️ Sweet Potato Gratin

Ingredients
- 700 g sweet potatoes
- 100 g butter
- 100 g sugar
- 0.5 tsp cinnamon powder
- 1 l orange juice
- 1 tbsp cornstarch
- 2 tbsp water
- 1 untreated lemon (zested peel)
- vanilla sauce
- 250 ml milk
- 250 ml whipping cream
- 1 vanilla pod
- 5 egg yolks
- 100 g sugar
Instructions
- 1. For the vanilla sauce, combine the milk with the cream, the vanilla pod, and the scraped seeds, then bring to a boil.
- 2. Whisk the egg yolks with the sugar in a bowl until frothy. Then stir in the hot milk-cream mixture into the egg yolk mixture, return everything to the pot, and whisk into a sauce over low heat while stirring constantly, making sure not to let it boil.
- 3. Strain the vanilla sauce through a sieve, let it cool, and lightly sprinkle the surface with sugar to prevent a skin from forming.
- 4. Peel the sweet potatoes, wash them thoroughly, and slice them into about 0.5 cm thick slices. Arrange these in a greased baking dish in a shingled pattern.
- 5. Melt the butter. Add the sugar and cinnamon, then stir in the orange juice and simmer everything on low heat for 10 minutes. Smoothly mix the cornstarch with 2 tbsp water and the lemon zest, then fold it into the mixture. Pour over the sweet potatoes.
- 6. Place the baking dish with the potatoes in a cold oven (center) and bake at 180 °C for approx. 35 minutes, until they are soft.
- 7. Serve the baked sweet potatoes on plates and serve with the vanilla sauce.
