🍽️ Sweet Potato Waffles with Avocado, Lamb's Lettuce and Pistachios

Ingredients
- 300 g sweet potatoes (cooked / preferably steamed)
- 150 g spelt whole wheat flour
- 125 ml buttermilk
- 1 egg
- 1 tsp baking powder
- 1 tbsp olive oil
- salt
- pepper
- 1 avocado
- 1 small red onion
- 50 g American pistachios (shelled)
- 2 handfuls corn salad
Instructions
- 1. Place the sweet potato in a bowl and mash thoroughly with a potato masher. Add the flour, buttermilk, egg, baking powder, and olive oil, and mix everything well. Season with salt and pepper.
- 2. Preheat the waffle iron and bake the batter in it to make 4 crispy waffles.
- 3. Cut the avocado in half, remove the pit, and slice the flesh into wedges. Peel the onion and slice it into thin rings. Roughly chop the pistachios. Thoroughly wash, spin dry, and pick over the corn salad.
- 4. Plate the sweet potato waffles and garnish with corn salad, avocado, pistachios, and onion rings.
