🍽️ Nourishing Sweet Potato and Quinoa Stew

Ingredients
- 1 sweet potato
- 200 g quinoa
- salt
- ground cumin
- paprika powder
- 2 handfuls kale (or spinach)
- 2 tbsp tahini
- 2 tsp olive oil
- 2 tbsp lemon juice
- 4 tbsp pomegranate seeds
- 2 tsp sesame seeds
Instructions
- 1. Peel the sweet potato and cut it into small cubes.
- 2. Place the sweet potato cubes into a pot.
- 3. Add the quinoa to the pot.
- 4. Pour 400 milliliters of water over the ingredients.
- 5. Let the mixture cook for about 15 minutes.
- 6. Stir in salt, cumin, and paprika powder.
- 7. Wash the kale thoroughly.
- 8. Shake the kale dry.
- 9. Tear the kale into bite-sized pieces using your hands.
- 10. Add the torn kale pieces to the pot.
- 11. Let the stew continue to simmer.
- 12. Wait until the quinoa and sweet potatoes are fully cooked.
- 13. Drizzle tahini over the finished stew.
- 14. Add a little olive oil.
- 15. Stir in some lemon juice.
- 16. Sprinkle pomegranate seeds over the dish.
- 17. Finish by garnishing with sesame seeds.
- 18. Serve the stew warm.
