🍽️ Crispy Sweet Potato Quiche with Goat Cheese

Ingredients
- 2 medium sweet potatoes
- 400 g frozen spinach
- 2 garlic cloves (finely chopped)
- 1 onion (finely chopped)
- 1 tbsp coconut oil
- 1 tbsp olive oil
- 4 eggs
- 180 ml almond milk
- 1 pinch nutmeg
- 60 g grated cheese
- 60 g goat cheese
- salt
- pepper
Instructions
- 1. Peel the sweet potatoes and slice them into thin rounds.
- 2. Brush a baking dish with coconut oil.
- 3. Arrange the sweet potato slices tightly on the bottom of the dish.
- 4. Halve the remaining slices and place them cut-side down around the edge to form a crust.
- 5. Season the base with a pinch of salt and pepper.
- 6. Cover the dish and bake in a preheated oven at 200°C conventional heat (180°C fan or gas mark 3) for 30 minutes.
- 7. Heat one tablespoon of olive oil in a non-stick pan over medium heat.
- 8. Sauté the garlic and onions until golden brown, stirring occasionally.
- 9. Add the thawed spinach to the pan.
- 10. Stir everything over low heat until the ingredients are well combined.
- 11. Season the spinach mixture with salt and pepper to taste.
- 12. Whisk the eggs in a bowl.
- 13. Add almond milk, grated nutmeg, salt, and pepper to the egg mixture and whisk well.
- 14. Remove the quiche base from the oven.
- 15. Spread the spinach mixture evenly over the sweet potato base.
- 16. Pour the egg mixture over the filling.
- 17. Sprinkle the grated cheese over the top.
- 18. Distribute the goat cheese pieces on the surface.
- 19. Cover the quiche and bake in a preheated oven at 200°C conventional heat (180°C fan or gas mark 3) for 30 minutes.
- 20. Remove the cover and bake for another 10 minutes until the goat cheese is golden brown.
