  1. 1. Peel the sweet potatoes and slice them into thin rounds.
  2. 2. Brush a baking dish with coconut oil.
  3. 3. Arrange the sweet potato slices tightly on the bottom of the dish.
  4. 4. Halve the remaining slices and place them cut-side down around the edge to form a crust.
  5. 5. Season the base with a pinch of salt and pepper.
  6. 6. Cover the dish and bake in a preheated oven at 200°C conventional heat (180°C fan or gas mark 3) for 30 minutes.
  7. 7. Heat one tablespoon of olive oil in a non-stick pan over medium heat.
  8. 8. Sauté the garlic and onions until golden brown, stirring occasionally.
  9. 9. Add the thawed spinach to the pan.
  10. 10. Stir everything over low heat until the ingredients are well combined.
  11. 11. Season the spinach mixture with salt and pepper to taste.
  12. 12. Whisk the eggs in a bowl.
  13. 13. Add almond milk, grated nutmeg, salt, and pepper to the egg mixture and whisk well.
  14. 14. Remove the quiche base from the oven.
  15. 15. Spread the spinach mixture evenly over the sweet potato base.
  16. 16. Pour the egg mixture over the filling.
  17. 17. Sprinkle the grated cheese over the top.
  18. 18. Distribute the goat cheese pieces on the surface.
