🍽️ Spicy Sweet Potato Pan with Radishes

Ingredients
- 800 g sweet potatoes (2 pieces)
- 20 g ginger
- 1 bunch radishes
- 1 tbsp sesame oil
- 0.25 tsp ground cumin
- 0.25 tsp ground coriander
- 1 lime
- 0.5 pomegranate
- 1 bunch cilantro (20 g)
- salt
- pepper
Instructions
- 1. Peel the sweet potatoes and cut them into approx. 1–1.5 cm cubes.
- 2. Peel the ginger and chop it finely.
- 3. Wash the radishes and slice them thinly.
- 4. Heat the oil in a large non-stick pan.
- 5. Add the chopped ginger to the hot pan.
- 6. Sauté the ginger for 1–2 minutes over medium heat.
- 7. Add the sweet potato cubes to the pan.
- 8. Sauté the sweet potatoes for 7–8 minutes over medium heat.
- 9. Add cumin and coriander to the pan.
- 10. Sauté the spices for 2 minutes.
- 11. Add the radish slices to the pan.
- 12. Sauté everything for another 2–3 minutes.
- 13. Halve the lime.
- 14. Squeeze the lime juice.
- 15. Halve the pomegranate half.
- 16. Remove the seeds from the pomegranate half.
- 17. Wash the coriander.
- 18. Shake the coriander dry.
- 19. Pluck the coriander leaves.
- 20. Deglaze the sweet potatoes with the lime juice.
- 21. Season the pan with salt and pepper.
- 22. Sprinkle the sweet potato pan with the pomegranate seeds.
- 23. Sprinkle the sweet potato pan with the coriander leaves.
- 24. Serve the sweet potato pan.
