🍲 Creamy Sweet Potato Coconut Soup with Marinated Chicken

Ingredients
- 200 g chicken breast fillet (2 chicken breast fillets)
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 bunch spring onions
- 2 garlic cloves
- 30 g ginger (1 piece)
- 400 g sweet potatoes (1 sweet potato)
- 150 g tomatoes (2 tomatoes)
- 500 ml poultry broth
- 200 ml coconut milk (9 % fat)
- salt
- pepper
- 0.5 lime
- 4 Stiele coriander
Instructions
- 1. Rinse the chicken under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into small cubes.
- 3. Mix one tablespoon of oil with chili powder in a separate bowl.
- 4. Toss the chicken cubes in the oil-chili mixture until evenly coated.
- 5. Cover the bowl and place it in the refrigerator for at least 25 minutes to let the meat marinate.
- 6. Clean the spring onions, wash them, and slice them into fine rings.
- 7. Peel the garlic and the ginger.
- 8. Finely chop the garlic and the ginger.
- 9. Peel the sweet potatoes.
- 10. Cut the sweet potatoes into cubes of about two centimeters in size.
- 11. Wash the tomatoes.
- 12. Cut out the hard stem areas of the tomatoes in a wedge shape.
- 13. Dice the tomatoes roughly.
- 14. Heat the remaining oil in a pot.
- 15. Add the spring onions, garlic, and ginger to the hot oil and sauté them briefly.
- 16. Add the sweet potato cubes after two minutes.
- 17. Continue to sauté the potatoes for another three minutes.
- 18. Add the diced tomatoes to the pot.
- 19. Pour in the broth and the coconut milk.
- 20. Season the soup with salt and pepper.
- 21. Bring the mixture to a boil.
- 22. Reduce the heat to medium and let the soup simmer covered for 20 minutes.
- 23. Heat a non-stick pan over high heat.
- 24. Fry the marinated chicken cubes all over for four to five minutes.
- 25. Season the fried chicken with salt just before serving.
- 26. Squeeze the lime to extract the juice.
- 27. Wash the cilantro and shake it dry.
- 28. Puree the finished soup finely with a hand blender.
- 29. Finish the soup with the lime juice and taste it one last time.
- 30. Add the fried chicken cubes to the soup.
- 31. Serve the soup garnished with fresh cilantro.
